Braised Kale with Tofu

I have recently become very obsessed with kale, which is great because it is so healthy! This recipe starts out very much the same as the braised kale with spaghetti. The onions caramelize to give it a deliciously sweet flavor. This dish works on its own, or you could toss it over rice/grains. I had leftovers the next night with linguine.




Braised Kale with Tofu
makes about 2 servings

1 package firm tofu, cut into 1 inch pieces
sesame oil
olive oil
1 yellow onion, roughly chopped
3 cloves garlic, thinly sliced
1 bunch kale, cut into 1 inch pieces
2 tablespoons soy sauce
sesame seeds

Heat oils in a pan over medium high heat. Add tofu and saute until it browns slightly. Remove from pan and set aside.
Add more oil to the pan and decrease heat to medium. Add onions and garlic. Let the onions cook slowly until the caramelize slightly. Add the kale along with a tablespoon of water and more oil if needed. Reduce heat to low and cover the pan. Let the kale braise for about 20 minutes, stirring occasionally. Add tofu back into the pan along with soy sauce to taste. Garnish with a dash of sesame oil and sesame seeds.
