Molten Chocolate Cakes


If you are looking for a last-minute Thanksgiving dessert, I would like to recommend this dessert. It's delicious, very easy to make, and seems a lot more impressive than it actually is. It takes only fifteen minutes to throw it together and then 8-10 minutes to bake. I made these cakes for a dinner party so I wanted to get them ready to go in the oven before my guests arrived. I was worried that letting the batter sit for so long would mess them up, but it didn’t seem to have any effect! It is really pretty hard to mess p melted chocolate- it will taste good no matter what.

Molten Chocolate Cakes
makes 6 servings

4 tbsp unsalted butter, at room temperature plus more for the ramekins
1/3 C granulated sugar, plus more for the ramekins
3 large eggs
1/3 C all-purpose flour
¼ tsp salt
8 oz bittersweet chocolate, melted in the microwave
powdered sugar for dusting
vanilla ice cream for serving
6 small ramekins

Preheat the oven at 400F
Butter the four ramekins and dust with granulated sugar and tap out excess. Set aside. In a medium bowl, cream the butter and sugar until fluffy. Add the eggs one at a time, beating well after each addition. Add in flour and salt. Mix until just combined. Add in the melted chocolate. Do not over mix or the cakes will not rise. Divide the batter evenly among the prepared ramekins. At this point you can cover them with foil and let them sit at room temperature for a few hours.
Place on a baking sheet and bake for 8-10 mins, until the tops of the cakes no loger jiggle when the pan is lightly shaken. Remove from the oven and let stand for 10 mins. Dust with icing sugar and serve with ice cream.
